Description

This comforting Taco Spaghetti recipe combines the flavors of taco seasoning, creamy cheese, and ground beef with tender spaghetti for a hearty and delicious meal. Perfect for weeknight dinners, it’s easy to prepare with simple ingredients and baked to bubbly perfection.

Ingredients

Scale

Pasta

  • 8 oz spaghetti

Meat and Seasoning

  • 1¼ pounds lean ground beef or ground turkey
  • 1 (1-oz) package taco seasoning
  • â…” cup water

Cheese and Sauces

  • 1 (10.5-oz) can Unsalted Cream of Chicken Soup
  • 1 (10-oz) can Rotel diced tomatoes and green chilies (undrained)
  • 1 (8-oz) package Velveeta cheese, cubed
  • 1½ cups shredded cheddar cheese

Instructions

  1. Preheat and prepare baking dish: Preheat your oven to 350ºF (175ºC) and lightly spray a 9×9-inch baking dish with cooking spray. Set it aside for later use.
  2. Cook spaghetti: Boil the spaghetti according to package directions until al dente. Drain thoroughly and set the pasta aside.
  3. Cook the meat: In a large skillet over medium-high heat, cook the ground beef or turkey until no longer pink. Drain excess fat, then return the meat to the skillet.
  4. Add seasoning and simmer: Stir in the taco seasoning and water into the cooked meat. Cook the mixture for about 5 minutes to enhance the flavors.
  5. Make cheesy sauce: Reduce heat to low and stir in the cream of chicken soup, cubed Velveeta cheese, and undrained Rotel tomatoes. Stir constantly until the Velveeta melts completely and the sauce is creamy.
  6. Combine pasta and sauce: Add the cooked spaghetti into the skillet with the cheese and meat sauce. Stir well to combine evenly.
  7. Assemble and bake: Pour the spaghetti mixture into the prepared baking dish and top with shredded cheddar cheese. Bake in the preheated oven for 30 minutes or until heated through and bubbly.

Notes

  • You can substitute ground turkey for beef for a leaner option.
  • For a spicier dish, choose Rotel with extra hot diced tomatoes and chilies.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
  • To make it gluten-free, use gluten-free spaghetti and verify seasoning and soup ingredients.
  • Adding chopped onions or bell peppers to the meat while cooking can add extra flavor and texture.
