  • 1 cup sour cream
  • 1½ cups shredded cheddar cheese


Instructions

  1. Preheat Oven: Preheat your oven to 350ºF (175ºC) and spray a 9×9-inch baking dish with cooking spray to prevent sticking.
  2. Cook and Season Beef: In a skillet over medium heat, brown the ground beef thoroughly. Drain off any excess fat, then return the beef to the skillet. Add the taco seasoning, diced tomatoes and green chiles (undrained), and tomato sauce. Stir the mixture well and let it simmer gently for 5 minutes to meld the flavors together.
  3. Combine Creamy Rice Mixture: In a separate bowl, mix together the cooked rice, cottage cheese, and sour cream until fully combined and creamy.
  4. Layer the Casserole: Spread the rice mixture evenly in the bottom of your prepared baking dish. Carefully spoon the taco meat sauce over the rice layer. Then sprinkle the shredded cheddar cheese evenly on top of the casserole to create a cheesy finish.
  5. Bake the Casserole: Place the baking dish in the preheated oven and bake uncovered for 20 to 25 minutes, or until the cheese is melted, bubbly, and slightly golden on top.
