Ingredients
Scale
Marinade
- ¼ cup cider vinegar
- 3 Tbsp Dijon mustard
- 3 cloves garlic, minced
- 3 Tbsp lime juice
- 4½ tsp lemon juice
- ½ cup brown sugar
- ½ tsp salt
- ¼ tsp black pepper
- 3 Tbsp olive oil
Main
- 6 boneless skinless chicken breast halves
Instructions
- Prepare the marinade: In a medium bowl, whisk together cider vinegar, Dijon mustard, minced garlic, lime juice, lemon juice, brown sugar, salt, black pepper, and olive oil until fully combined and smooth.
- Marinate the chicken: Place the 6 boneless skinless chicken breasts in a large resealable plastic bag or shallow dish. Pour the prepared marinade over the chicken, ensuring all pieces are well coated. Seal the bag or cover the dish and refrigerate for at least 8 hours, or up to overnight to maximize flavor absorption.
- Grill the chicken: Preheat your grill to medium-high heat. Remove the chicken from the marinade and discard any remaining marinade. Grill the chicken breasts for approximately 12 to 15 minutes, turning occasionally, until the internal temperature reaches 165°F (75°C) and the chicken is cooked through with beautiful grill marks.
Notes
- For best results, marinate the chicken overnight to enhance flavor and tenderness.
- To check doneness, use a meat thermometer to ensure the internal temperature reaches 165°F.
- You can substitute chicken thighs if preferred, adjusting cooking time accordingly.
- If you don’t have a grill, you can cook the chicken on a grill pan or broil in the oven, watching carefully to avoid burning.
