Ingredients
Scale
Sausage and Vegetables
- 1 pound Italian sausage (sweet or spicy)
- 2 large sweet potatoes, peeled and diced
- 1 tablespoon olive oil
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 onion, chopped
- 4 cloves garlic, minced
Honey Garlic Sauce
- 1/4 cup honey
- 1/4 cup soy sauce
- 1 tablespoon apple cider vinegar
- 1 teaspoon ground ginger
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the sweet potatoes.
- Roast Sweet Potatoes: In a large bowl, toss diced sweet potatoes with olive oil, salt, and pepper. Spread them in a single layer on a baking sheet and roast for 20 minutes until they become tender and caramelized.
- Cook Sausage: While the potatoes roast, heat a large skillet over medium heat. Add the Italian sausage and cook until browned and fully cooked, breaking it into smaller pieces. Remove from skillet and set aside.
- Sauté Vegetables: In the same skillet, add chopped onion and bell peppers and sauté for 5-7 minutes until softened.
- Add Garlic: Add minced garlic to the skillet and cook for 1-2 minutes until it becomes fragrant.
- Make Honey Garlic Sauce: In a small bowl, whisk together honey, soy sauce, apple cider vinegar, and ground ginger. Pour this sauce over the sautéed vegetables and stir well to combine.
- Combine Sausage and Sauce: Return the cooked sausage to the skillet, stirring to combine with the vegetables and sauce. Cook for 2-3 minutes to allow the flavors to meld.
- Add Sweet Potatoes: Add the roasted sweet potatoes to the skillet and gently toss everything together. Cook for an additional 2 minutes until everything is heated through.
- Garnish and Serve: Remove from heat and garnish with chopped fresh parsley before serving.
Notes

- For a gluten-free version, substitute soy sauce with tamari or coconut aminos.
- Make sure to roast the sweet potatoes in a single layer to ensure even caramelization.
- Adjust the amount of honey in the sauce if you prefer a less sweet taste.
- This dish reheats well and can be enjoyed as leftovers for up to 3 days.
