- 1 tbsp taco seasoning (or 1/2 tsp each chili powder, garlic powder, onion powder, paprika, cumin)
- 1 can Rotel (10 ounces, or 1 can diced tomatoes with chilies)
- 1 brick Velveeta cheese (2 cups, 16 ounces, cubed)

- Reserved diced tomatoes (about 1 tbsp)
- Freshly chopped parsley or cilantro
- Chopped green onions
Instructions
- Cook the Ground Beef: Heat a large skillet or frying pan over medium heat. Add 1 lb ground beef and break it apart with a wooden spoon. Cook for about 5 minutes, stirring occasionally, until no pink remains and the meat is fully cooked. Drain any excess fat from the pan.
- Add Seasoning and Rotel: Reduce the heat to medium and stir in 1 tbsp taco seasoning along with the entire can of Rotel, including juices. Cook for 2-3 minutes until the mixture is fully combined and begins to simmer. Optionally, reserve 1 tbsp of diced tomatoes for garnish.
- Melt the Cheese: Add the cubed Velveeta cheese to the skillet. Stir continuously until the cheese melts completely and the dip is smooth and creamy.
- Garnish and Serve: Optionally, sprinkle the reserved diced tomatoes, freshly chopped parsley or cilantro, and chopped green onions on top. Serve the dip immediately with tortilla chips, crostini, or toasted baguettes for dipping and enjoy!
