Ingredients
Scale
Bread and Cheese
- 16 slices soft white or brioche bread
- 2 cups shredded cheddar cheese (or a mix of cheddar and mozzarella)
Butter Mixture
- 4 tablespoons unsalted butter, softened
- Pinch of garlic powder (optional)
- Pinch of salt
Optional
- 1 tablespoon mayonnaise (optional, for extra crispiness)
- Dipping sauces like tomato soup or marinara (optional, for serving)
Instructions
- Prepare the Bread: Lay out the bread slices flat and use a round cookie cutter or a knife to trim each slice into 2-inch circles or squares, creating bite-sized pieces perfect for mini sandwiches.
- Make the Butter Mixture: In a small bowl, combine the softened unsalted butter with a pinch of garlic powder and a pinch of salt, mixing thoroughly for a flavorful spread.
- Butter the Bread: Lightly spread the butter mixture on one side of each bread piece. If using, spread mayonnaise on the opposite side to add extra crispiness when cooked.
- Assemble the Mini Sandwiches: On the unbuttered side of half the bread pieces, sprinkle about 1 tablespoon of shredded cheese evenly. Top each with another bread piece, positioning the buttered side outward, to form the mini grilled cheese sandwiches.
- Cook the Sandwiches: Heat a skillet or griddle over medium heat. Place the assembled mini sandwiches on the skillet and cook for 2-3 minutes on each side, pressing gently with a spatula until they turn golden brown and the cheese inside melts completely.
- Serve Warm: Remove the mini grilled cheeses from the skillet and serve immediately, optionally with dipping sauces like tomato soup or marinara to complement the cheesy goodness.
Notes
- You can prepare the mini sandwiches in advance and reheat them in an oven preheated to 350°F for 5–7 minutes before serving to regain crispiness.
- Experiment with different cheese varieties such as Gruyère, Swiss, or pepper jack to customize flavor profiles.
- Using brioche bread adds a richer, buttery flavor for an indulgent twist.
- Mayonnaise is optional but adds an extra crispy crust when cooked.
