- 1 small head green cabbage (about 6 cups sliced), thinly sliced

Instructions
- Heat the fats: Heat the olive oil and butter in a large 12-inch skillet over medium-high heat until melted and shimmering.
- Brown the kielbasa: Add the kielbasa slices and cook for 3 to 4 minutes, stirring occasionally, until browned on both sides. Remove the kielbasa from the skillet and set aside on a plate.
- Sauté the aromatics: Add the sliced onion to the skillet and cook for 2 to 3 minutes, stirring occasionally until it starts to soften. Stir in the minced garlic and cook for an additional 30 seconds until fragrant.
- Add and season potatoes: Add the cubed potatoes along with smoked paprika, dried thyme, salt, and black pepper. Stir well to coat the potatoes evenly in the spices.
- Cook potatoes: Pour in the chicken broth, cover the skillet, reduce heat to medium, and cook for 10 to 12 minutes. Stir once or twice during this time until the potatoes are mostly tender but still hold their shape.
- Add cabbage: Stir in the thinly sliced cabbage, cover again, and cook for another 6 to 8 minutes. Stir halfway through to ensure even cooking until the cabbage is tender and potatoes are fully cooked.
- Reintroduce kielbasa and finish: Return the browned kielbasa to the skillet and cook uncovered for 2 minutes to warm through. Stir in apple cider vinegar if using, taste, and adjust seasoning with salt and black pepper as needed.
- Serve: Serve the skillet hot, garnished with chopped parsley if desired for a fresh finish.
