Instructions

  1. Prepare Raspberry Jelly Layer: In a saucepan over medium heat, combine fresh raspberries and sugar. Cook until the raspberries break down and release their juices. Stir in gelatin thoroughly, then remove from heat and allow to cool. Refrigerate until the jelly sets firmly.
  2. Make Chocolate Mousse: Whip 1 cup of heavy cream in a bowl until stiff peaks form. Gently fold the cooled, melted dark chocolate into the whipped cream to create a smooth, airy mousse.
  3. Assemble the Cake: Place the cooled chocolate cake on a serving platter. Spread a layer of chocolate mousse evenly over the cake. Carefully add the raspberry jelly layer on top of the mousse. Spread another layer of chocolate mousse over the raspberry jelly layer.
  4. Make Chocolate Ganache: Heat 1/2 cup heavy cream in a saucepan until it just starts to simmer. Pour the hot cream over the chopped dark chocolate in a bowl. Let it sit for a minute, then stir gently until smooth and glossy.
