Ingredients
Scale
Main Ingredients
- 1 lb cheese-filled tortellini (fresh or frozen)
- 2 chicken breasts or thighs (cooked and sliced)
- 2 cups broccoli florets
Sauce Ingredients
- 4 cloves garlic (freshly minced)
- 1 cup heavy cream
- 1 cup grated Parmesan cheese (avoid powdered)
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 cup chicken broth
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Cook the Tortellini: In a large pot of salted water, cook the tortellini according to package instructions. Drain and set aside.
- Sauté the Chicken: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the sliced chicken and season with salt and pepper. Cook until golden and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.
- Cook the Broccoli: In the same skillet, add the broccoli florets. Sauté for 3-4 minutes until tender-crisp, adding a pinch of salt and pepper. Remove and set aside with the chicken.
- Prepare the Sauce: In the same skillet, melt the butter over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant, being careful not to burn it. Pour in the chicken broth and bring to a simmer, scraping up any bits from the bottom of the skillet.
- Add Cream and Cheese: Add the heavy cream and Parmesan cheese, stirring until the cheese has melted and the sauce has thickened, about 5 minutes. Season with Italian seasoning, salt, and pepper to taste.
- Combine Everything: Return the cooked chicken, broccoli, and tortellini to the skillet. Toss everything together until well coated in the creamy garlic Parmesan sauce.
- Final Cook: Let it cook for another 2-3 minutes to heat everything through and meld the flavors together.
- Serve: Serve hot, garnished with additional Parmesan cheese or fresh herbs if desired. Enjoy your creamy, savory skillet meal!
Notes
- Use fresh or frozen tortellini according to availability and preference.
- For a lighter option, substitute heavy cream with half-and-half, but the sauce will be less rich.
- To cook chicken quickly and evenly, pound breasts to an even thickness before slicing and cooking.
- Feel free to add fresh herbs like parsley or basil as garnish for extra freshness.
- Leftovers can be refrigerated and reheated gently on stovetop or microwave for up to 2 days.
