Description

Delightful and colorful Cake Mix Cookies made using Funfetti cake mix and instant pudding for extra moistness. These soft, fluffy cookies are baked to perfection, then sandwiched with a creamy, smooth cream cheese frosting, making them perfect for parties and celebrations.

Ingredients

Scale

Cookie Dough

  • 1 (14.25-ounce) package Funfetti cake mix (or alternate flavor)
  • 1 (3.4-ounce) package instant vanilla pudding mix
  • 2 large eggs
  • 8 tablespoons unsalted butter (room temperature)
  • 1 teaspoon vanilla extract
  • 1/2 cup mix-ins of choice (e.g., chocolate chips, sprinkles, nuts)

Cream Cheese Frosting

  • 8 tablespoons unsalted butter (room temperature)
  • 1 (8-ounce) package cream cheese (brick-style, softened)
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon salt
  • 3 cups powdered sugar

Instructions

  1. Prepare Dough: In a stand mixer or large bowl with a hand mixer, combine the Funfetti cake mix, instant vanilla pudding mix, butter, eggs, and vanilla extract. Beat until a very thick dough forms, scraping the bowl as needed. Gently fold in any desired mix-ins.
  2. Form: Roll approximately 1-1/2 tablespoons (about 30 grams) of dough into balls. Place on a tray and chill in the refrigerator for 30–60 minutes to help them maintain puffiness during baking.
  3. Bake: Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat. Space dough balls about 2 inches apart on the sheet. Bake for 9–10 minutes, until the bottoms are slightly browned. Avoid overbaking. Let cookies rest on the baking sheet for 5 minutes before transferring to a cooling rack. Repeat with remaining dough.
  4. Make Frosting: Soften cream cheese in the microwave using 15–20 second bursts until at room temperature. In a mixer, cream together the butter and cream cheese until smooth. Add vanilla extract and salt, then gradually mix in powdered sugar. Beat on low speed for 30 seconds, then increase to medium-high and beat for 1–2 minutes until creamy. For thicker frosting, add an extra 1/4 cup powdered sugar. Chill frosting for 20–30 minutes to firm up.
  5. Assemble: Once cookies have cooled completely, place frosting into a piping bag fitted with a wide tip. Pipe frosting onto one cookie and gently sandwich with another. Continue with all cookies. Cover whoopie pies with plastic wrap and refrigerate overnight to let them soften. Before serving, bring to room temperature for best flavor and texture.

Notes

  • You can substitute the Funfetti cake mix with any other cake mix flavor for a different twist.
  • Mix-ins can include chocolate chips, nuts, sprinkles, or dried fruit based on your preference.
  • Refrigerating the dough balls helps cookies retain their shape and prevents spreading.
  • Do not overbake to ensure soft and tender cookies.
  • Allowing the assembled whoopie pies to rest overnight in the fridge helps the frosting soften and enhances flavors.
