Description

These Freezer Croissant Breakfast Sandwiches are perfect for busy mornings, combining flaky croissants with savory scrambled eggs, cheese, and your choice of bacon or sausage. Prepare them ahead, freeze, and enjoy a quick, delicious breakfast any day of the week.

Ingredients

Scale

Sandwich Ingredients

  • 6 large croissants, sliced in half
  • 6 large eggs
  • 2 tablespoons milk
  • 1 tablespoon butter
  • 6 slices cheddar cheese
  • 6 slices cooked bacon or 6 breakfast sausage patties, cooked
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Preheat and Toast Croissants: Preheat your oven to 350°F (175°C). Slice the croissants in half horizontally and place them cut side up on a baking sheet. Toast them in the oven for about 5 minutes to prevent sogginess when the sandwich is assembled.
  2. Prepare the Egg Mixture: In a mixing bowl, whisk together the eggs, milk, salt, and black pepper until combined and slightly frothy.
  3. Cook the Scrambled Eggs: Melt the butter in a nonstick skillet over medium heat. Pour in the egg mixture and gently scramble them, stirring occasionally until the eggs are just set but still moist. Remove the skillet from heat to avoid overcooking.
  4. Assemble the Sandwiches: On the bottom halves of each toasted croissant, evenly divide the scrambled eggs. Top each with a slice of cheddar cheese and then a slice of cooked bacon or a cooked breakfast sausage patty. Place the croissant tops on each sandwich.
  5. Wrap for Freezing: Wrap each completed sandwich tightly in plastic wrap, then cover in aluminum foil. Place all wrapped sandwiches in a freezer-safe bag. Store in the freezer for up to 2 months.
  6. Reheat and Serve: When ready to enjoy, remove the foil and plastic wrap from a sandwich. Wrap it loosely in a paper towel and microwave for 1 to 2 minutes until thoroughly heated. For a crispier croissant, warm the sandwich in a 350°F oven for 10 to 12 minutes.

Notes

  • You can substitute cheddar cheese with Swiss or pepper jack for different flavors.
  • For a healthier option, use turkey bacon or add sautéed spinach or sliced tomatoes before freezing.
  • Allow sandwiches to cool completely before wrapping to prevent excess moisture, which can cause sogginess.
