Ingredients
Scale
Meat and Seasoning
- 1 lb ground beef
- 1 chopped onion
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 tsp chili powder
- 1 tsp cumin
- 1 tsp dried cilantro
- 1/4 tsp cayenne
- 1 tbsp minced garlic
Base and Toppings
- 16 small fajita size flour tortillas
- 1 can refried beans
- Taco sauce, as needed
- 2 cups shredded Colby Jack cheese
- Diced tomatoes (for garnish)
- Chopped green onions (for garnish)
Cooking
- Vegetable oil (for frying tortillas)
Instructions
- Brown the Ground Beef: In a large skillet over medium-high heat, add the ground beef and chopped onion. Cook until the beef is browned and the onion is soft. Drain off any excess grease.
- Season the Beef: Add salt, pepper, chili powder, cumin, dried cilantro, cayenne, and minced garlic to the browned beef. Stir well to evenly combine the spices with the meat and cook for an additional 1-2 minutes to release the flavors.
- Fry the Tortillas: In a separate skillet, heat enough vegetable oil over medium heat to fry the tortillas. Fry each fajita-sized flour tortilla until they turn golden brown on both sides. Remove and drain on paper towels to remove excess oil.
- Assemble the Pizzas: Take one fried tortilla and spread a thin layer of refried beans on it. Top with a generous portion of the seasoned ground beef followed by shredded Colby Jack cheese. Place another fried tortilla on top, add taco sauce, and sprinkle more cheese on the top layer.
- Bake the Pizzas: Preheat the oven to 400°F (200°C). Place the assembled tortillas on a baking sheet and bake for about 10 minutes, or until the cheese is fully melted and bubbly.
- Finish and Serve: Remove the baked pizzas from the oven. Garnish with diced tomatoes and chopped green onions before serving for added freshness and color.
Notes
- For a spicier version, add extra cayenne or chopped jalapeños to the beef mixture.
- Use corn tortillas for a gluten-free option, but they may be more fragile when frying.
- Leftover Mexican pizzas can be reheated in a skillet or oven to retain crispiness.
- To reduce oil absorption, fry tortillas at proper medium heat and do not overcrowd the pan.
