Description

Delight in these Easy Brookie Bars, a perfect blend of rich fudgy brownies and chewy chocolate chip cookies layered together for an irresistible dessert treat. With a simple step-by-step process, these bars combine the best of both worlds and are perfect for any occasion.

Ingredients

Scale

Brownie Layer

  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/2 cup semi-sweet chocolate chips

Cookie Layer

  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. Prepare the pan: Preheat your oven to 350°F. Line a 9×13-inch baking pan with parchment paper or lightly grease it to prevent sticking.
  2. Make brownie batter: In a medium bowl, whisk together the melted butter and granulated sugar until smooth. Add the eggs and vanilla extract, mixing well. Stir in the cocoa powder, flour, salt, baking powder, and 1/2 cup of chocolate chips until the mixture is fully combined.
  3. Spread brownie batter: Pour and spread the brownie batter evenly into the prepared baking pan, creating a smooth layer.
  4. Make cookie dough: In a separate bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy. Beat in the egg and vanilla extract. Mix in the flour, baking soda, and salt until just combined. Gently fold in the remaining 1/2 cup of chocolate chips.
  5. Layer cookie dough: Drop spoonfuls of the cookie dough over the brownie batter, then gently spread it out to cover most of the surface.
  6. Bake: Place the pan in the oven and bake for 30 to 35 minutes. Check doneness by inserting a toothpick in the center; it should come out with a few moist crumbs.
  7. Cool and serve: Let the brookie bars cool completely in the pan before slicing into 16 squares for serving.

Notes

  • For extra richness, use dark chocolate chips or add chopped walnuts to either the brownie or cookie layer.
  • Be careful not to overbake to maintain a fudgy brownie texture.
  • Store leftovers in an airtight container at room temperature for up to 4 days.
