Ingredients
Scale
Main Ingredients
- 2 lbs boneless skinless chicken breasts
- 2 cans (14.5 oz each) diced tomatoes
- 2 cups chicken broth
- 2 tablespoons taco seasoning
- 2 teaspoons minced garlic
- ½ cup chopped onion
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
Toppings
- Sour cream (for serving)
- Shredded cheddar cheese (for serving)
- Chopped cilantro (for garnish)
Instructions
- Combine Ingredients: Place the chicken breasts, diced tomatoes, chicken broth, taco seasoning, minced garlic, chopped onion, and chopped green and red bell peppers into a 6-quart crock pot. Stir gently to mix all the ingredients evenly together.
- Cook: Cover the crock pot with its lid and set it to cook on low for 6-8 hours or on high for 3-4 hours. Cook until the chicken breasts are fully cooked through and tender enough to shred easily.
- Shred Chicken: Carefully remove the chicken breasts from the crock pot and use two forks to shred the meat into bite-sized pieces. Return the shredded chicken back into the soup and stir well to incorporate all the flavors.
- Serve and Garnish: Ladle the hot soup into bowls and top with your favorite garnishes such as sour cream, shredded cheddar cheese, and chopped cilantro. Serve immediately and enjoy a warm, flavorful meal.
Notes
- Use low or high cook setting based on your available time; low setting yields more tender chicken.
- Adjust taco seasoning according to your spice preference.
- Leftovers can be refrigerated for up to 3 days or frozen for longer storage.
- For a thicker soup, you can let it cook uncovered for the last 30 minutes to reduce the broth slightly.
- Optional additions include black beans or corn for extra texture and flavor.
