Description

A flavorful and healthy recipe for Chicken Kofta grilled to perfection and served with a refreshing garlic yogurt sauce. This dish combines aromatic spices with fresh herbs for a delightful Middle Eastern-inspired meal that’s quick to prepare and perfect for any occasion.

Ingredients

Scale

For the Kofta

  • 500 grams (about 1 pound) ground chicken
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1/4 cup fresh parsley, finely chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper (or to taste)
  • 2 tablespoons olive oil (for grilling)

For the Garlic Yogurt Sauce

  • 1 cup plain yogurt
  • 2 tablespoons lemon juice
  • Pinch of salt

Instructions

  1. Mix Ingredients: In a large mixing bowl, combine the ground chicken, finely chopped onion, minced garlic, and fresh parsley to create the base of the kofta mixture.
  2. Add Spices: Add ground cumin, ground coriander, salt, and black pepper to the bowl. Mix thoroughly until all ingredients are well incorporated.
  3. Shape the Kofta: Wet your hands with water to prevent sticking and shape the meat mixture into elongated oval-shaped koftas, each about the size of a small sausage.
  4. Prepare the Grill: Preheat your grill or grill pan to medium-high heat. Brush the surface with olive oil to prevent the koftas from sticking.
  5. Grill the Kofta: Place the shaped koftas on the grill and cook for 5-7 minutes on each side until they develop a golden brown crust and are cooked through internally.
  6. Make Garlic Yogurt Sauce: In a small bowl, combine plain yogurt, fresh lemon juice, and a pinch of salt. Stir until smooth and well blended to create the sauce.
  7. Serve: Plate the grilled chicken koftas and drizzle or serve alongside the garlic yogurt sauce. Accompany with your choice of sides such as rice, salad, or flatbread.

Notes

  • Ensure the grill is properly preheated to avoid the koftas sticking and to achieve nice grill marks.
  • Wetting your hands before shaping the koftas helps prevent the mixture from sticking.
  • You can adjust the level of spices according to your taste preferences.
  • The garlic yogurt sauce can be enhanced with a bit of minced garlic if desired for extra flavor.
  • This dish pairs well with Middle Eastern sides like tabbouleh, hummus, or pita bread.
