Ingredients
Scale
Protein and Vegetables
- 2 cups cooked chicken, shredded or diced
- 2 cups broccoli florets (fresh or frozen)
Pasta and Sauce
- 8 ounces fettuccine pasta
- 2 cups Alfredo sauce (store-bought or homemade)
Cheeses
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
Seasonings and Garnish
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1 tablespoon olive oil
- 1/2 teaspoon red pepper flakes (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the casserole.
- Cook Pasta: Bring a large pot of salted water to a boil, then add the fettuccine pasta. Cook according to package instructions until al dente, usually about 8-10 minutes. Drain and set aside.
- Prepare Broccoli: If using fresh broccoli, blanch the florets in boiling water for 2-3 minutes until bright green and slightly tender, then drain. If using frozen broccoli, thaw and drain excess water.
- Mix Ingredients: In a large bowl, combine the cooked chicken, broccoli, cooked pasta, Alfredo sauce, olive oil, garlic powder, onion powder, black pepper, salt, and red pepper flakes if using. Stir gently until everything is evenly coated with sauce and seasonings.
- Assemble Casserole: Transfer the mixture into a greased 9×13 inch baking dish. Spread it evenly and sprinkle the shredded mozzarella and grated Parmesan cheese evenly over the top.
- Bake: Place the casserole dish in the preheated oven and bake for 20-25 minutes, or until the cheese is melted, bubbly, and slightly golden on top.
- Garnish and Serve: Remove from oven and let the casserole cool for 5 minutes. Garnish with freshly chopped parsley before serving for a bright flavor and appealing presentation.
Notes
- You can use store-bought Alfredo sauce for convenience, or make your own for a richer flavor.
- Feel free to substitute fettuccine with other pasta types like penne or rotini.
- To add extra flavor, consider sautéing garlic in olive oil before mixing it in.
- Leftovers keep well in an airtight container in the refrigerator for up to 3 days.
- For a lower calorie option, use a light Alfredo sauce and reduced-fat cheese.
- If you like it spicy, increase the red pepper flakes according to your taste.
