Ingredients
Scale
Crust
- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
Ice Cream Filling
- 2 cups cherry ice cream, softened
- 1 cup vanilla ice cream, softened
- 1/2 cup mini chocolate chips
- 1/2 cup chopped cherries (fresh or maraschino)
Optional Toppings
- 1/4 cup chocolate fudge sauce (for drizzling)
- Whipped cream
- Chocolate shavings
- Extra maraschino cherries
Instructions
- Prepare the Crust: In a bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix thoroughly until the mixture is well combined and resembles wet sand.
- Form and Bake the Crust: Press the crust mixture firmly into the bottom and up the sides of a 9-inch pie dish to create an even layer. Bake in a preheated oven at 350°F (175°C) for 8-10 minutes, or until the crust is lightly golden. Remove from the oven and allow it to cool completely.
- Prepare the Ice Cream Filling: In a separate bowl, gently stir together the softened cherry ice cream, vanilla ice cream, mini chocolate chips, and chopped cherries until the additions are evenly incorporated.
- Assemble the Pie: Pour the ice cream filling into the cooled graham cracker crust, smoothing the top with a spatula. If desired, drizzle chocolate fudge sauce over the top for added richness.
- Freeze: Place the assembled pie in the freezer for at least 4 hours, or until the ice cream is firm and set sufficiently to slice cleanly.
- Serve and Garnish: Remove the pie from the freezer, slice into portions, and garnish each slice with whipped cream, chocolate shavings, and extra maraschino cherries if desired. Serve immediately for a refreshing dessert experience.
Notes
- For best results, soften the ice creams slightly at room temperature before mixing to achieve easy blending.
- The crust can be prepared a day ahead and kept tightly wrapped in the refrigerator.
- Use fresh cherries for a less sweet, more natural flavor or maraschino cherries for a classic taste.
- The pie should be stored in the freezer until serving to maintain its shape and texture.
- Let the pie sit at room temperature for 5-10 minutes before slicing to make cutting easier.
