Description

This Caramel Turtle Poke Cake combines rich chocolate cake with a luscious caramel and sweetened condensed milk mixture, studded with chocolate chips and crunchy pecans. Topped with a fluffy whipped cream frosting, this dessert is an indulgent treat perfect for any celebration or cozy night in. The poke technique allows the caramel to seep deep into the cake, creating moist, gooey bites bursting with flavor.

Ingredients

Scale

Chocolate Cake

  • 1 box chocolate cake mix (plus ingredients listed on the box)

Caramel Mixture

  • 1 can (14 oz) sweetened condensed milk
  • 1 jar (12 oz) caramel topping

Toppings

  • 1 cup chocolate chips
  • 1 cup chopped pecans
  • 2 tbsp butter, softened

Optional Whipped Topping

  • 1 cup heavy cream
  • 1 tbsp powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Bake the Cake: Prepare and bake the chocolate cake according to package instructions in a 9×13-inch baking pan. Once the cake is done, let it cool for about 10 minutes to set and be ready for the next step.
  2. Poke the Cake: Use the end of a wooden spoon or a similar tool to poke holes evenly all over the surface of the cake about 1 inch apart. This allows the caramel mixture to soak deep inside.
  3. Make the Caramel Mixture: In a microwave-safe bowl, combine the sweetened condensed milk and caramel topping. Heat in 30-second intervals in the microwave, stirring after each interval until the mixture is smooth and well blended. Pour this warm caramel mixture evenly over the cooled cake, making sure it fills the poked holes. Let it soak in for 10-15 minutes to deepen flavor and moisture.
  4. Add Chocolate & Pecans: Sprinkle the chocolate chips and chopped pecans evenly over the top of the cake to add texture and extra flavor layers.
  5. Prepare Whipped Topping (Optional): In a mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Spread this whipped cream topping gently over the cake for a creamy finish.
  6. Chill & Serve: Refrigerate the poke cake for at least 2 hours or overnight to allow the flavors to meld and the cake to firm up. Before serving, drizzle extra caramel sauce over the top for added richness and presentation.

Notes

  • The whipped topping is optional but adds a light, creamy contrast to the rich caramel and chocolate.
  • Use a homemade chocolate cake or your preferred boxed mix for best results.
  • The cake tastes even better after chilling overnight as the flavors fully develop.
  • For added indulgence, warm some extra caramel sauce to drizzle at serving time.
  • Ensure the cake is fully cooled before poking holes to prevent it from breaking apart.
