Panna Cotta Base

  • 1 cup heavy cream
  • 1 cup whole milk
  • 1/2 cup goat’s cheese (softened)

  • 2 teaspoons powdered gelatin
  • 2 tablespoons cold water

Blackberry Compote

  • 2 cups fresh blackberries
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 tablespoon water (if needed)


Instructions

  1. Prepare the Gelatin: In a small bowl, sprinkle the powdered gelatin over 2 tablespoons of cold water and let it bloom for 5 minutes to soften and activate.
  2. Make the Panna Cotta Base: In a medium saucepan, combine the heavy cream, whole milk, sugar, and vanilla extract. Heat the mixture over medium heat until warm but not boiling, then remove from heat.
  3. Incorporate the Gelatin and Goat’s Cheese: Add the bloomed gelatin to the warm cream mixture and stir until completely dissolved. Add the softened goat’s cheese and whisk vigorously until smooth and well combined.
  4. Chill the Panna Cotta: Pour the panna cotta mixture into individual serving glasses or molds. Refrigerate for at least 4 hours, or preferably overnight, until fully set.
  5. Make the Blackberry Compote: While the panna cotta sets, prepare the compote by combining the blackberries, sugar, lemon juice, and vanilla extract in a small saucepan. Cook over medium heat for 5-7 minutes, mashing the blackberries to release juices. If the compote is too thick, add up to 1 tablespoon of water and simmer for an additional 2-3 minutes until slightly thickened. Remove from heat and let cool.
  6. Serve: Once the panna cotta is set, top each serving with a generous spoonful of blackberry compote. Optionally, garnish with fresh blackberries and mint leaves for an elegant finish.
