Ingredients
Scale
Noodles
- 1 package Flat Rice Noodles (fresh or soaked dried)
Sauces & Oils
- 3 tablespoons Soy Sauce (low-sodium recommended)
- 2 tablespoons Oyster Sauce (or mushroom oyster sauce for vegetarian)
- 1 tablespoon Sesame Oil (lightly used for flavor)
Vegetables
- 1 cup Bell Peppers (chopped)
- 1 cup Bean Sprouts (added at the end)
- 1 bunch Green Onions (chopped)
Proteins
- 1 cup Chicken (sliced thinly)
- 1 cup Tofu (firm, pan-fried)
- 1 cup Shrimp (sautéed until cooked)
Instructions
- Prepare Noodles: Soak dried flat rice noodles in warm water for about 30 minutes until softened, or if using fresh noodles, set them aside ready for cooking.
- Heat Wok or Skillet: Warm a large wok or skillet over medium-high heat and add a tablespoon of cooking oil to coat the pan.
- Cook Proteins: Sauté the sliced chicken, pan-fried tofu, and sautéed shrimp in the hot wok for 3-5 minutes until golden brown and cooked through. Remove the proteins from the wok and set aside.
- Stir-Fry Vegetables: In the same wok, add the chopped bell peppers and green onions, stir-frying them for 2-3 minutes until they start to soften and release their aroma.
- Add Noodles and Proteins: Add the soaked or fresh flat rice noodles back into the wok along with the cooked proteins.
- Season and Toss: Pour in soy sauce, oyster sauce, and a splash of sesame oil. Toss all ingredients together thoroughly to ensure the noodles and other ingredients are evenly coated with the savory sauce.
- Final Touch: Add the bean sprouts at the end, stirring gently for about a minute to combine while preserving their crisp texture.
- Serve Hot: Transfer the fried hor fun to serving plates and enjoy immediately for the best texture and flavor.
Notes
- Use fresh flat rice noodles if possible for better texture, but dried noodles soaked properly work well too.
- Adjust protein choices according to preference; vegetables or mushrooms make great vegetarian options.
- Be careful not to over-soak or overcook the noodles as they can become mushy.
- Use low-sodium soy sauce to keep the sodium level moderate.
- Serve immediately to enjoy the noodles’ optimal texture and avoid sogginess.
